Kaylie Campbell is a North Texas native, foodie and sports lover. She has designed and taught a variety of nutrition courses, recently developed the curriculum for the Bachelor of Science in Nutrition degree and oversees the undergraduate nutrition and dietetics program. Campbell has more than six years of experience as a registered dietitian, specializing in sports dietetics. She has worked with student-athletes to encourage a positive relationship with food and help them achieve their performance goals. 

A Conversation with Kaylie

What is your favorite class or subject to teach? What do you find most rewarding about teaching this subject?

My favorite course to teach is Nutrition Through the Life Cycle. Regardless of profession, I believe it is important to understand the basics of nutrition and how nutrition impacts our health. It is rewarding to see students apply what they have learned in our classes in their own lives. Seeing positive changes, improving their relationship with food/nutrition, and using new skills long after they graduate.

What drew you to this particular field of study?

Playing soccer competitively and eventually at the collegiate and semi-pro level, I learned about the importance of nutrition and its impact on health and performance. Becoming a dietitian combined my passion for athletics and food. Educating and having a positive impact on others’ well-being is a rewarding part of the career. There is always more to learn and discover in the field of Nutrition and Dietetics. What makes it exciting are the endless careers and opportunities within nutrition. 

What do you enjoy doing in your spare time?

I enjoy staying active through strength training and walks with our Saint Bernard, Gibb. I love to bake and try new recipes. My husband and I are big sports fans, so we watch and attend many sporting events throughout the year. My favorite teams are the Texas Rangers and Dallas Stars.

What advice would you give a prospective or current student about making the most of their college experience?

Do not be afraid to try new things. Attend campus and athletic events! They are great ways to make new friends and be a part of the campus community and culture. Join a club or student organization. Find a mentor. Become a mentor.
